Ingredients
500g beef sirloin or tenderloin, thinly sliced
2 tablespoons olive oil
1 large onion, finely chopped
2 cloves garlic, minced
250g mushrooms, sliced (button or cremini)
1 tablespoon Dijon mustard
1 cup beef stock
1 cup sour cream (or full-fat Greek yogurt)
Splash of brandy or red wine (optional)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Cooked rice, egg noodles, or mashed potatoes for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season beef with salt and pepper. Sear the slices in small batches until browned. Remove from the pan and set aside.
- In the same pan, add a touch more oil if needed. Sauté the chopped onion until soft, then add garlic and mushrooms. Cook until mushrooms are golden brown and moisture has evaporated.
- Stir in the Dijon mustard and cook for 1 minute. Deglaze the pan with brandy or wine, scraping up the flavorful browned bits from the bottom.
- Add the beef stock and simmer for 7–10 minutes, or until reduced by half.
- Reduce heat to low and stir in the sour cream gently until the sauce becomes silky and smooth. Do not boil.
- Return the seared beef to the pan. Stir to combine and warm through for 2–3 minutes.
- Taste and adjust seasoning as needed. Garnish with chopped parsley and serve over your choice of noodles, rice, or mashed potatoes.
