Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season beef with salt and pepper. Sear the slices in small batches until browned. Remove from the pan and set aside.
  2. In the same pan, add a touch more oil if needed. Sauté the chopped onion until soft, then add garlic and mushrooms. Cook until mushrooms are golden brown and moisture has evaporated.
  3. Stir in the Dijon mustard and cook for 1 minute. Deglaze the pan with brandy or wine, scraping up the flavorful browned bits from the bottom.
  4. Add the beef stock and simmer for 7–10 minutes, or until reduced by half.
  5. Reduce heat to low and stir in the sour cream gently until the sauce becomes silky and smooth. Do not boil.
  6. Return the seared beef to the pan. Stir to combine and warm through for 2–3 minutes.
  7. Taste and adjust seasoning as needed. Garnish with chopped parsley and serve over your choice of noodles, rice, or mashed potatoes.
